Ingredients
- 2 tablespoon extra virgin olive oil
- 4 medium zucchini or yellow squash or a mix (ends trimmed)
- 1 teaspoon kosher salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1/4 cup freshly grated Parmesan cheese

Instructions
- Heat the olive oil in a nonstick skillet over medium low heat. Add the zucchini, salt, onion powder, pepper, and thyme.
- Stir zucchini, increasing heat to medium heat. Continue to cook, stirring occasionally, until zucchini is cooked through and beginning to brown about 10 to 15 minutes. Sprinkle Parmesan cheese.
- Serve immediately.
