Sauteed Zucchini with Parmesan

Ingredients

  • 2 tablespoon extra virgin olive oil
  • 4 medium zucchini or yellow squash or a mix (ends trimmed)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/4 cup freshly grated Parmesan cheese

Instructions

  1. Heat the olive oil in a nonstick skillet over medium low heat. Add the zucchini, salt, onion powder, pepper, and thyme.
  2. Stir zucchini, increasing heat to medium heat. Continue to cook, stirring occasionally, until zucchini is cooked through and beginning to brown about 10 to 15 minutes. Sprinkle Parmesan cheese.
  3. Serve immediately.
